I find a lot of inspiration for recipes online and from cookbooks. This recipe was originally by 'The Food Charlatan' who has a beautiful food blog. If you're out on the interwebs check it out. 👍 I usually change recipes to suit my tastes, cut the calories where I can, and the results are below. There is a lot of wiggle room in this recipe, don't sweat the details, use what you have ... I've played with this a few times now and jogged the ingredients up and down a little here and there and it was still great. Enjoy!
Cuban Mojo Pork
Ingredients:
Pork Shoulder 3.5 lbs
1/2 bunch cilantro chopped
1/2 head garlic (6-8 chopped cloves)
20 fresh mint leaves chopped
Zest of 1 orange
3/4 cup of orange juice
1/2 cup lime juice
1 T oregano
2 tsp cumin
1 tsp salt
1 tsp pepper *Mix all ingredients, place in container with meat (Ziplock or Tupperware) overnight to marinate. Be sure to turn meat at least once before cooking. Preheat oven to 425 F . Cover a edged baking pan with aluminum foil and top with wire rack. Place pork on top and bake for 30 min. Reduce oven temp to 325 F and cook for 1.5 hours until pork reads 160 degrees. Remove to cutting board, cover with foil. Allow meat to rest for 20 minutes before slicing. You can also smoke or grill this cut of meat if you prefer. 👍
