Taco Tuesday Corn Salsa
The #tacoTuesday finale with a little twist! Using the homemade taco seasoning from this morning's post with some ground turkey, we had a choice of the masa flour tortillas or mini taco "boats" on an endive petal. I have to say I loved this option! It was so fun and just fresh, reminded me of lettuce wraps. ( plus bonus no carbs here!) Made a charred corn salsa to top it all off and all in all had some happy tummies.
Y'all know I love my salsa so here's this little version.
Some little notes: To char the corn I used the great microwave corn trick (back a little ways on my ig) to cook & husk the corn and then just cooked it over my gas cooktop open flame until it was toasty... You could broil or grill it also.
I used three different heirloom tomatoes for color and taste/texture variation which was great. This recipe served 4.
Ingredients:
1 corn cob, charred, cut off cob
3 tomatoes, chopped
1/2 jalapeño chopped
1/2 small white onion
Juice of 1/2 lime
1 T white vinegar
1/2 t salt
6 sprigs Cilantro, chopped
Mix all and allow to set for a few hours so the flavors can marry. It was sweet and had a nice kick on the back end from the jalapeño. 👍 Hope everyone had a great day!
