Bacon Wrapped Stuffed Dates
So you know I've been playing with dates lately, and had to try a recipe recommended by my favorite Stella &; Dot stylist @lilinista (check her out if you need any BLING! She recommended dates, stuffed with almonds & feta and wrapped in bacon! Well hello new football appetizer!! I'm sold! These were addictive and disappeared quickly!
Here's how... Preheat oven 375. Soak toothpicks in warm water while prepping. Blanch almonds for about 10 minutes to loosen skins, then rinse in cold water to be able to handle, pinch skins off. Slice open dates, remove pit. Insert almond and spoon in as much feta as you like/can. Take 1/2 slice of bacon and wrap each date and secure with toothpick. I used thick cut bacon..and mine took a little longer to cook (see browned date in pic but GOOOOOD) Line an edged sheet pan in foil and place a rack on top, if you don't have one it's ok, the bottoms of your dates will just get a little more brown.
Bake for approx 15-20 depending on bacon. Turn halfway thru cook time to evenly brown. If you're like me, you want these crisp! This isn't a 'new' thing by far, just my first time making them, and I loved them!
One thing I noticed about this appetizer, is you can totally play with it, change up your cheese; blue cheese, goat cheese, omit and change the nut even; pecans, walnuts. Have fun! Play with your food!
